Harvest is Happening Fall is all about food, family and football! While it may be the fourth quarter for fresh California peaches, plums and nectarines, as the season’s end is just around the corner, there’s still plenty of time left in the game and fruit on the trees. Cobb Salad Wrap
Prosciutto-Wrapped White Nectarines

A delicious blend of salty and sweet flavors, prosciutto wrapped around sweet Summerwhite® nectarine slices and topped with Gorgonzola cheese makes a great snack for any gathering—sure to be a touchdown with your fans!

2   large fresh California Summerwhite® nectarines  
20   thin strips prosciutto (about 4 oz.)  
1/2
  cup crumbled Gorgonzola cheese  
       
     
     
       
       
       
       

Preparation

Makes 20 Servings
Prep Time: 10 minutes
Cook Time: 4-6 minutes

Preheat broiler and line a baking sheet with foil. Cut each nectarine into 10 slices and wrap each with a prosciutto strip. Place on prepared baking sheet and broil for 2 to 3 minutes on each side or until prosciutto is crispy. While warm, sprinkle with cheese. Serve with toothpicks.

Per serving: 30 calories, 2g protein, 2g carbohydrate, 2g total fat, 5mg cholesterol, 190mg sodium, 0g fiber.

Summer Fruit Freeze

To freeze fresh California peaches, plums, and nectarines, wash the fruit in cool running water. Then cut into desired size pieces, place in a bowl, sprinkle with a small amount of lemon juice to prevent browning, and stir. Then toss the fruit with a small amount of sugar. Allow the fruit to sit until it releases syrup, about 15 minutes. Place in freezer container, label and freeze.
